-so at least when the curry roux is old, using two instead of the directed one makes a huge difference

-3/4 peas --more peas!

-left out hte potato by accident once, much better with the potato, also had trouble with wateriness and added 2 approx tbsp of corn starch--thickened with cold water first that also helped.

Dragon Noodles -- A good Base

Made Dragon Noodles, they were yummy, but not spectacular for my tastes, btu a lot of the varients in the comments look promising. Longest was just getting the water to boil for the noodles--could easily improve.
