Curried Tofu Salad

This was fast to make and delicious, an easy addition to the fast vegetarian egg salad like things that I make. I didn't like the taste as much until several days in, then it was delicious -- favorite way to serve-- over salad, with some pepitas and crackers and some extra salt and pepper on top.

Egg Muffins

This isn't really the recipe that I followed. The recipe that I followed was spray some non-stick, crack some eggs in there and add some cheese and salsa and shove it in at 375 for a while until firm. I think it would taste better blended up like this, but anything goes.
